Colorado-based Smiling Moose Deli is adding a second North Texas franchise and bringing its mix of hearty sandwiches and salads, fresh-made soups and specialty coffees to UT Arlington's College Park District.

The fast-casual restaurant that includes former Dallas Cowboy Daryl"Moose"Johnston as a partner is expected to open at UT Arlington in November. The company opened a Carrollton outlet in 2011 and plans to open locations in Frisco and Denton in the next year, said Jennifer Frank, managing partner of Smiling Moose Deli DFW.

"We love the college environment and the diversity of the restaurants in the College Park District,"Frank said."We will dominate the specialty coffee, sandwich, soups and salad category, but we also love that we will be next to a frozen yogurt shop and tacos."

Smiling Moose Deli will occupy 2,100 square feet off South Pecan Street and becomes the seventh College Park District restaurant. Coolberry Frozen Yogurt is expected to open this month immediately north of the deli. Digg's Taco Shop is scheduled to open to the south, also in November.

Pie Five Pizza Co. opened at Pecan and West First Street last month. Other College Park District restaurants will open throughout the fall and include Mavs Sports Grill, GRIP Mediterranean Grill and Pho Xpress.
